Everyone Likes Beets

Last week, I enjoyed the newly implemented coffee service at Vera and talked local food with Chef and owner, Mark Mendez. Vera serves dishes with little fuss. When you put only a few things on the plate, they must be of exemplary quality. So, Chef Mendez shops Green City Market (believe me, I’ve seen him shopping) and works with various area farmers for the best ingredients. While I drank an excellent pour-over, we talked about using local food year-round and the balancing act a Chicago-area restaurant must take. “People always like beets,” the Chef explained, how he could always have something local on the menu no matter what time of year. Other local items Vera currently uses includes local potatoes and radishes and beef from an Iowa farm called Jefferson Township. Vera believes in the eat local mission, and they believe in the Local Beet’s mission. We’re proud to unite, with Vera (1023 W. Lake, Chicago).  Vera is sponsoring our What’s In Season Now and Where to Get It regular feature. Follow their lead. Find your local beets and other good food now.
