I packed 8 CSA ingredients in 1 bowl
My favorite organic produce delivery is Irv & Shelly’s Fresh Picks. Our little family of four eats so many veggies we order two boxes a week. This past week some of the highlights of my delivery were:
- red bell pepper
- portobello mushrooms
- green onion
And, they are all in featured in this delicious salad. If you’ve been reading along, you probably know I cook my produce delivery food pretty much right away so I can quickly turn my kitchen into a (healthy) fast food restaurant for the week. Read more on that in Meal Planning around your CSA
Since the ingredients were pretty much ready to go, dinner came together in minutes, here’s the deets:
- I started with a bed of romaine and radicchio
- topped with yams roasted earlier in steak spice (oil-free)
- sliced red bell pepper
- portobellos marinated in balsamic vinegar, red wine and steak spice, then grilled and sliced
- thinly sliced radishes
- sliced green onion (I used green and white parts)
- topped with cilantro
Salads like this are my favorite quick summer meal. Notice in the picture below some little hands were snapping it up as I was busy snapping pics.
