Recipe: Peanut Butter Oat Cookies

Theses cookies are like candy – other than the oats, no one would suspect that they’re made largely with whole grain.


¾ cup whole wheat pastry flour

½ cup all-purpose flour

¼ cup old-fashioned rolled oats, I’m a big fan of Bob’s Red Mill oats

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon kosher salt

1 cup peanut butter, not natural

1 stick unsalted butter

2 tablespoons clover honey

1/3 cup granulated sugar

1/4 cup well packed brown sugar

1 large egg

1 teaspoon vanilla extract

¾ cup semi-sweet chocolate chips, optional


Make the Dough: In a large bowl, stir together the flours, oats, baking soda, baking powder and salt. With a stand mixer fitted with a paddle attachment, cream together the butter, peanut butter, honey, and sugars for approximately 2 minutes. On low speed, add the dry ingredients until moistened. Increase the speed to medium and mix until well blended. Add the egg and the vanilla extract and mix for one minute on medium speed. With a rubber spatula, stir in the chocolate chips if using.

Shape and Bake the Cookies: Preheat the oven to 350°F . On silpat or parchment lined baking sheets, roll 2 tablespoons of dough 1-inch apart. Bake for 18 minutes.
