The basis of this recipe comes from some seasonal cooking book, but I cannot seem to find which one.  The key ingredient I stole was the addition of the cheddar cheese.  The following salad is made from ingredients available to a Chicago based locavore during the cold of winter.


2 apples cored and julienned

1/2 head of red cabbage shredded

2 kohlrabi julienned

2 carrots shredded or julienned

Some available herb including cilantro or mint, finely chopped

4 ounces cheddar cheese, julienned

1 lemon

Oil and vinegar

Salt and pepper


Make a dressing with lemon, oil, vinnegar

Combine other ingredients in a large mixing bowl.  Season with salt and pepper.  Add dressing

This sounds nice, but to my tastes I'd probably leave out the cheese and add a small teaspoon of mustard to the dressing.
