Paul Virant, soon to be Iron Cheftestant, Food and Wine Best New Chef, likes local farms. His ever changing menu brings the best of the areas bounty in dishes both traditional and creative. Moreover, he is a believer in the season preserved, and Vie is known for their pickled and other house preserved foods. Finally, Chef Virant is an endless tinkerer; trying his hand at pickled herring or a slew of house made charcuterie. Vie is one of the best restaurants in the Chicago area. Its commitment to local makes it that much more admirable.
