The Green City Market at the Nature Museum will be back open this weekend and so will the other winter markets.

This plate above, of deer broth, moss, chestnut and berries evokes a barren tree, antlers and the signs of winter. Chef Iliana Regan and her team are bringing the bounty of the forest to the table in a very artful and soulful way at Elizabeth Restaurant. Although not every item was local or necessarily foraged, they try to utilize elements that represent the season. For her winter menu, with the abundant harvest of this past summer, she will be using much of the produce that she has already canned and those jars were lining some of the shelves of the restaurant. Although not a “vegetarian” menu, vegetables, moss, funghi and other plants were the stars of the meal. Meat, seafood, roe, were present but a part of the bigger whole and not the main focus. So if in the middle of January you need a bit of local food inspiration or ideas of what to do in the summer while the harvest is in progress, dine at Elizabeth for some inspiration.

Another new angle to food sustainability in the market world is the opening of Eataly Chicago on Monday. Although this is a huge place and obviously focused on Italy, it was gratifying to see signs of commitment to food sustainability around the store. Their Vino Libero wine area signage and the staff explained their support of fewer chemicals and more sustainable growing and production methods used in the vineyards and in making the wine. Local vendor Scrumptious Pantry products were on the shelves and although it’s focus is Italian, the Eataly staff relayed that they are sourcing product like meat from the surrounding area and part of the Italian culture is fresh product as much as possible.

The holiday markets are in full force, the Co-op Image Holiday Bazaar is this Friday from 6-10pm at Ignite Glass Studios which supports the winter and spring programs for the youth, the AUA is sponsoring a Movie and Mingle night tonight at the Jane Addams Hull House and Chef Michael Kornick is cooking at Inspiration Kitchen on Monday night, lots more in the week ahead:

Chicago - Piranha In The Stew The Stew Supper Club – Sauce and Bread Kitchen 6338 North Clark 7-10pm Normally it’s the time of year at The Stew Supper Club that we throw down for the feast of the 7 fishes but this year we decided to throw a piranha in the pot.  The Stew cook Anne (Crumb Chicago, SBK) and Mike (Co-op Sauce, SBK) will thicken the roux with or friend and cook Eric May (Piranha Club).  It will be an eclectic collaboration with a rugged pescetarian feast with a South American bite (veggies still always welcome).
