Ace Beet Reporter Jeannie Boutelle knows that there’s more than one way to look at local food.

“Everybody talking rustic Italian, should be talking local. Because that’s what Italian food is to Italians— it’s fresh and simple. And to be fresh it has to be growing right there. It’s all seasonal— you don’t do citrus in the winter or stuff like that.”  Gebert finds a chef saying all the right things.

I like the way this person is approaching their eat local challenge.

We ascribe to the “local is as far as it takes to get the right food” theory, and fair trade is vital and important to what we consider good, local food.
