The Local Calendar 6/6/12 It’s Alliums Galore At The Markets
It is that time of the season for alliums galore at the markets. For market purposes the most visible alliums are onions, garlics, chives, leeks and shallots. They all have scapes, long stems with a bulb at the end and are one of the most prevalent vegetables at the market this time of year. Garlic scapes which you may find featured on some menus are the start of the flowering part of the garlic plant. You can use garlic scapes for pesto, for cooking, for many of the same reasons you would use garlic. The one thing that is for sure is that the market are full of alliums. If you are lucky you will run into a chef at the markets who may give you some helpful hints or the vendors have lots of great ideas themselves. Paula Jeremias at Tiny Greens recommends grilling the spring scallions with a little olive oil and salt and pepper as a great accompaniment to steaks.(There is always a “after I hit the publish button moment”) and today at the Green City Market, River Valley Kitchens had garlic scape, asparagus and mushroom soup that was very rustic with whole mushrooms in this soup/stew, full of flavor and served with a crusty piece of bread, grilled asparagus and scapes as well as portabella sandwich with scapes, many ready to eat options cooking on the River Valley grills.
