What’s Local Cassie’s Green Grocer – Fennel

Saw the first local fennel of the year yesterday at Cassie’s Green Grocer @1402 W. Grand, Chicago.  Although I rue the amount of waste present in a fennel purchase, and believe you-me-both, I try to find uses for the stalks and fronds (try stock), I very much enjoy the culinary uses of fennel.  I like it shaved, raw, especially with some citrus (although the citrus in the market now sucks); I like it grilled, and maybe most of all, I like to slow cook it into a relish.  Head over to Cassie’s, there was not that much there.
