The cornmeal is fantastic as well. I made an entirely local cornbread to partner with a not-so-local black-eye pea, andouille and bell pepper stew on Saturday. Drizzled with Sandhill sorghum, it was quite tasty. It will serve me well tomorrow as a stuffing for a Cedar Valley chicken.

Sounds like a great recipe, Melissa. I bet it fills the house with terrific smells, too. I did a little experient last week, taking the Three Sisters pecans with me into Whole Foods, then tasting one side by side with the pecans available in the store's bulk bins. No contest! The local pecans tasted fresh, sweet, clean and delicious, while the WF nuts left a mildly unpleasant bitter aftertaste. I use them mainly to eat out of hand, but last week I also made fiery spiced pecans with local butter, local honey, cayenne, dried orange zest, cinnamon, and cumin. Perfect for snacking with a beer while wathcing a game.
